This week we added 66 miles to the training logs, bringing the total run to date to 1,360 miles. We have 100 miles left in New Mexico until we reach Texas, which is the state of our next destination city, Porter. Have another great week, ladies!

Riverton Half Marathon
This past Saturday I ran the Riverton Half Marathon in Utah with my good friend, Andrea. And I was not all that impressed with myself, truth be told. Instead of berating my performance, though, I will just say that we had a lot of fun. The weather looked beautiful, but it was a little chilly and we had a nice strong head wind from about mile 4-9, which made it nice and cold (and like we were running uphill the whole way). At least the sun was shining and it wasn't raining or snowing, though. March in Utah can be risky! In fact, two years ago, this same race was canceled due to a freak snow storm that dumped about 6 inches of snow the morning of the race. So I'll take sunny and breezy.
This event is a small community race; the half marathon is capped at 600 racers, and it didn't sell out this year. It makes for a nice open course, the start and finish were not crowded at all, and there were plenty of bagels, fruit, and water for those of us who finished later than the main pack. And at $30 for the half marathon (if you register early), it's a hard event to top price-wise.
In spice of my performance challenges, I had a great time chatting with Andrea during the whole race. And I can also say that I learned new things about myself during the run and upon reflection after the race. I haven't decided if or how I will share those things, but I'll be sure to post here if the urge strikes. After the race, I got my favorite post-race meal - a Cafe Rio salad, and mowed the whole thing. All in all, it was a good day, and this is a race that I will probably do again next year. For anyone who is interested in a half marathon in Utah that isn't downhill, this is a great one!

Week 29 Update - 2,982 Miles
After 29 weeks of this challenge, we have completed 1,294 miles, and are through Albuquerque and have the Texas border in our sights. Keep up the great work, ladies!

Paleo Egg Muffins
Due to popular demand, here is the recipe for the Paleo egg muffins that were posted on Instagram this morning.
Yield: 12 muffins
Time: 45 minutes
Ingredients
10 eggs
1/2 lb. sausage (you can also use ham)
1 red pepper, diced
1/2 small onion, diced
1/2 large sweet potato, diced
Salt & pepper to taste
Preheat oven to 350 degrees F.
1. Brown sausage in pan on stovetop
2. Whip eggs
3. Mix chopped veggies and sausage into eggs
4. Season with salt & pepper to taste
5. Line muffin tin with cupcake liners or spray with cooking spray
6. Pour egg mixture into muffin pan - leave 1/4-1/2 inch open space at the top of each muffin
7. Bake for 18-20 minutes or until center of muffins are set
Cool and enjoy!
Sometimes I just grab one of these out of the fridge and eat it cold and they're delicious that way too!

Week 27 Update - 2,982 Miles
We are 27 weeks into this challenge, and just hit 1,185 miles completed. This means we are 306 miles short of the half way mark, and one week past what we had set as our time goal for the challenge. I'm not ready to throw in the towel yet on hitting our goal in one year, but we'll definitely have to step it up for the remaining 25 weeks if we're going to do it. Next week should bring us to Albuquerque, so stay tuned to see if we get there!

Week 26 Update - 2,982 Miles
I'm a couple days late getting this onto the blog, but we added 34 miles last week, bringing us to 1,131 miles logged. We are on our way into Albuquerque and running on historic Route 66!
