Due to popular demand, here is the recipe for the Paleo egg muffins that were posted on Instagram this morning.
Yield: 12 muffins
Time: 45 minutes
Ingredients
10 eggs
1/2 lb. sausage (you can also use ham)
1 red pepper, diced
1/2 small onion, diced
1/2 large sweet potato, diced
Salt & pepper to taste
Preheat oven to 350 degrees F.
1. Brown sausage in pan on stovetop
2. Whip eggs
3. Mix chopped veggies and sausage into eggs
4. Season with salt & pepper to taste
5. Line muffin tin with cupcake liners or spray with cooking spray
6. Pour egg mixture into muffin pan - leave 1/4-1/2 inch open space at the top of each muffin
7. Bake for 18-20 minutes or until center of muffins are set
Cool and enjoy!
Sometimes I just grab one of these out of the fridge and eat it cold and they're delicious that way too!
